Wine Grapes – Black and White | 黑白兩道

In this context, grapes could be classified into two groups – black and white. A typical Champagne would be a natural blend of Chardonnay, Pinot Noir and Pinot Meunier, except Blanc de blanc and Blanc de noir, which refers to white from white (pure Chardonnay) and white from black (pure Pinot Noir or Pinot Meunier or both) respectively. The dark-skinned Pinots render the wine length (after-taste) and backbone (balance) whilst white Chardonnay affects the acidity. There is, nonetheless, no golden ratio of grapes. After all, it depends on personal favours and types of sparkling wines.

釀香檳的葡萄大致上可分為兩種 - 黑和白。一支典型的香檳酒是由莎當妮、黑皮諾和梅皮諾恰好地融洽調製而成。例外的有Blanc de blanc,即由白到白和Blanc de noir,即由黑到白。黑色的皮諾們形成香檳的餘韻和平衡,而莎當妮則影響酒的酸度。所謂的黃金比例,其實取決於個人喜愛和香檳類型。
